At Little Griddle we spend a lot of time thinking about about the types of outdoor cooking that work best on a grill-top griddle or in a skillet over a grill or campfire, and the foods that are delicious right off of the grates, and we've never seen that concept explained in chart form before!   In the interest of better outdoor cooking for everyone, here are the results of the exhaustive outdoor cookware testing that Little Griddle has conducted over the years.  Let us know what we should add!

Recipe Idea: Omelettes with Sausage and Asparagus

Let's have brunch! These omelettes are perfect for enjoying outside. They are so simple - fresh eggs, salt and pepper, water and butter form the perfect griddle omelette, which can be enjoyed plain or with delicious additions such as crumbled bacon, sauteed mushrooms or green onion. The key is using butter or a cooking oil tprevent sticking, and moderate heat to cook the omelette without browning it. A little water in the mixture is important because it creates steam when it cooks, causing the omelettes to be light and fluffy - just like the clouds you'll be eating under. Recipe Idea: Roasted Shishito Peppers and Okonomiyaki Pancakes

You might own a grill with an ample heat supply and perfectly fine grill grates. "Why," you might ask yourself, "Would I want to griddle my burgers?" Great question, and the answer might surprise you: griddled burgers can taste better than grilled burgers. When properly prepared, a perfectly grilled burger is one of the most delicious things you can make on a grill. Unfortunately perfect preparation is difficult - grill heat is dry, and meat juices drip into the grill, leading to dry meat and flare-ups. Stainless steel griddles solve those problems.
