At Little Griddle we spend a lot of time thinking about about the types of outdoor cooking that work best on a grill-top griddle or in a skillet over a grill or campfire, and the foods that are delicious right off of the grates, and we've never seen that concept explained in chart form before!   In the interest of better outdoor cooking for everyone, here are the results of the exhaustive outdoor cookware testing that Little Griddle has conducted over the years.  Let us know what we should add!

Recipe Idea: Teppanyaki Steak and Garlic-Seared Vegetables

After we made these steaks we ate them, and they were the best steaks that we had ever had. The high heat forms a delicious crust that seals in juices, and the brief cooking time ensures the perfect degree of done-ness. The vegetables were the best vegetables we had ever eaten - garlicky, steaming hot, with that amazing char from the grill. Restaurant Test: Spaghetti with Clams + Grilled Vegetables

One of our favorite things anywhere is Maria Medoro's spaghetti with clams at Cucina Medoro, and she was kind enough to make some for us in our new ANYWARE™ 12" Skillet!  She also made fantastic scrambled eggs with tomato, mushroom and herbs - a simple dish packed with flavor. Recipe Idea: Omelettes with Sausage and Asparagus

Let's have brunch! These omelettes are perfect for enjoying outside. They are so simple - fresh eggs, salt and pepper, water and butter form the perfect griddle omelette, which can be enjoyed plain or with delicious additions such as crumbled bacon, sauteed mushrooms or green onion. The key is using butter or a cooking oil tprevent sticking, and moderate heat to cook the omelette without browning it. A little water in the mixture is important because it creates steam when it cooks, causing the omelettes to be light and fluffy - just like the clouds you'll be eating under. Recipe Idea: Roasted Shishito Peppers and Okonomiyaki Pancakes

When it comes to snacking, we scour the planet for the best-tasting stuff to cook on the griddle, and today we're going to look pretty far from our home base near Detroit to explore some fabulous Japanese snacks: griddle-roasted Shishito peppers, and the fantastic cabbage pancake called Okonomiyaki.
