Let's have brunch! These omelettes are perfect for enjoying outside. They are so simple - fresh eggs, salt and pepper, water and butter form the perfect griddle omelette, which can be enjoyed plain or with delicious additions such as crumbled bacon, sauteed mushrooms or green onion. The key is using butter or a cooking oil tprevent sticking, and moderate heat to cook the omelette without browning it. A little water in the mixture is important because it creates steam when it cooks, causing the omelettes to be light and fluffy - just like the clouds you'll be eating under. Recipe Idea: Stuffed French Toast

There are recipes that look tough to pull off but are actually really easy, and this stuffed French Toast makes a few common ingredients taste phenomenal and look impressive. It is the perfect backyard griddle meal to impress brunch guests or make a special family meal. By taking something that is already good (French Toast) and adding something else good to it (strawberries and cream cheese), you wind up with an exceptional result. Recipe Idea: "sausage cabbage fry"

We saw this fabulous sausage and cabbage recipe on Nigel Slater's excellent blog, and we think it would be ideal to be adapted to the outdoor griddle. Simple, high quality ingredients abound, and the cabbage is such a nice counter to the richness of the meat.
