Recipe Idea: Double-Cheeseburgers and Crispy Griddle Fries


 

The most amazing thing about cooking on a griddle is that it can create both juicy burgers, and crispy fries!  When you grill a burger, a lot of the juices drip into the fire.  This is great for creating steam and smoke, but not so great for retaining moisture in the burger.  

Griddled burgers are juicy because the seared exterior helps to keep in moisture, and the juices that do escape help to baste the burger as it cooks.  The end result of cooking a burger on the griddle is a burger with a great exterior crust and a juicy interior.   Add a slice of melty cheese and put some crispy oven fries on the side, and you're in business.  

To make Double-Cheeseburgers and Crispy Griddle Fries you will need: 

- 2 lb. 85% lean ground beef

- 8 slices of cheese, preferably something that melts easily

- Kosher salt and freshly ground black pepper

- Lettuce, tomato and pickle for garnish

- 4 hamburger buns 

- 1 lb. frozen french fries

To make the dish

Make the fries: pre-heat your oven according to the directions on the french fries.  Place frozen fries on your Little Griddle ANYWARE™ Double-Burner Griddle and cook according to directions. 

Make the burgers:  Form the beef into eight 1/4 lb. burger patties and season generously on both sides with salt and pepper.  Allow to rest for 10 minutes, and then while you pre-heat your ANYWARE™ Backwall Griddle on your stove or grill over medium-high heat.  Salting and resting will allow the salt to help form a delicious crust on the burgers when they are placed on the griddle.

When the griddle is hot (about one minute), place the burger patties on the griddle and allow to cook, undisturbed, for two minutes to sear the burgers and form a crust. Flip the burgers and sear for another two minutes, and begin to check for your preferred doneness.  Place a slice of cheese on each patty, and once cheese melts stack the burgers in pairs and remove to a platter.  

Place stacked patties on buns and top with lettuce, tomato and condiments as desired.  This is a seriously juicy burger!  Serves 4.
