Recipe Idea: Perfect Omelettes

Fluffy, creamy omelettes are a snap indoors or out with ANYWARE™ cookware. Fresh eggs, good butter and sea salt are all you need to create the perfect French omelette every time.  Our 12" skillet feeds a crowd, so this recipe is sized-up for a larger pan.  If making in an 8" pan, reduce by half.

To make Perfect Omelettes, you will need:

- 6 large, fresh eggs

- 2 Tb. fresh chives, minced

- 2 Tb. butter

- Salt and Pepper to taste

To make the dish: Beat eggs together until whites are fully incorporated into yolks, but do not over-mix.  Mix in salt and pepper.

Pre-heat skillet over medium-high heat and add butter.  When butter has begun to foam, add eggs and swirl pan to coat.  As eggs begin to set, use a silicone or wooden spatula to push eggs to pan center, allowing un-set egg mixture to continue to coat the pan.

Once the eggs have set but are still glossy and creamy, sprinkle chives over the top.  Gently shake pan to release the omelette, and roll onto a serving plate (as seen in our video) so that the omelette is folded in half. The entire process should take about one minute from start to finish.
