Recipe Idea: Country Omelette

Servings: 2-3 hungry people Prep Time: 30-40 minutes

Ingredients:

- 2 Tb Cooking oil

- 4-6 large eggs

- 1-2 Tb milk or water

- 1/2 lb bacon, cut into pieces

- 1/3 cup cubed green bell pepper

- 1/4 cup chopped onion

- 1/2 cup chopped cooked ham

- 2-3 cups hash browns

- 1/2 cup shredded Colby-Jack cheese

Instructions Preheat griddle inside outdoor barbecue grill to medium heat and add cooking oil. Fry bacon, hash browns, ham, peppers and onions. These items may be cooked together.

Mix the eggs in a bowl while the other items are cooking, and add water or milk during mixing if desired to lighten the final omelet.

Remove cooked items and set aside. Scrape the griddle with a stainless steel scraper to clean and spray a fresh even coat of oil on the griddle.

Slowly pour the eggs onto the hot surface, keeping them in place with a stainless steel flat spatula until the edges solidify. Add the precooked items to the middle of the eggs, distributing them evenly.

Add the cheese and when the eggs begin to cook through, use your spatula to fold one side and then the other side over the food in the middle. Flip once if desired and cook to desired doneness. Perfect when served with your favorite toast, bagel or biscuit!
